10oz Sirloin Steak with Aromatic Herbs and Butter
Ingredients:

- 2 tablespoons of the finest olive oil
- 4 fresh garlic cloves, minced
- 1 shallot, peeled and finely chopped
- 12-14 sprigs of fresh thyme, to infuse the steak with a burst of flavor
- 4 tablespoons of unsalted butter, for a rich and buttery finish
- Coarse salt and freshly ground pepper, to taste
Preparation Time:
2 hours to marinate, ensuring a deep penetration of flavours
Cook Time:
1 hour and 5 minutes to achieve the perfect medium-rare steak
Instructions:
- Preparation:
- Step 1: Begin by patting the steak dry on all sides using a paper towel. This ensures a perfect crust when searing.
- Seasoning:
- Step 2: Season the steak generously on all sides with coarse salt and cracked pepper.
- Step 3: Set it on a rack over a sheet tray and refrigerate uncovered for 2 to 24 hours, allowing the seasoning to permeate deeply, enhancing every bite.
- Cooking:
- Step 4: Preheat your oven to a low 200°, ready for slow cooking the steak.
- Step 5: Place the steak centrally in the oven, cooking for 45 to 60 minutes until it reaches an internal temperature of 100°.
- Searing:
- Step 6: Remove the steak from the oven and set aside momentarily.
- Step 7: Heat olive oil in a 10” cast-iron or carbon steel pan over high heat until it lightly smokes, setting the stage for a perfect sear.
- Step 8: Reduce the heat to medium, placing the steak in the pan for a precise 1-minute sear on each side, achieving a medium-rare perfection.

- Step 9: Engage the steak in a circular motion using tongs, encouraging an even browning.
