Ingredients:
- 4 skin-on chicken thighs and 4 drumsticks (consider a mixed pack)
- 6 tbsp piri-piri marinade (available in mild, medium, or hot variants)
- 1 tbsp sunflower oil
- 2 peppers of any color, deseeded and finely diced
- ½ bunch of spring onions, sliced (separate the white and green parts)
- 4 tbsp tomato purée
- 1 tbsp sweet smoked paprika
- 250g pre-cooked rice
Instructions:
- Marinate the Chicken:
- Preheat the oven to 200C/180C fan/gas 6. Make 3 slashes on each chicken piece to allow the marinade to penetrate deeper. Coat the chicken with the piri-piri sauce. If time permits, let it marinate in the fridge. Otherwise, ensure the chicken is well-coated and arrange them, skin-side up, in a roasting tin. Bake for 30 minutes. Then, ramp up the oven temperature to 220C/200C fan/gas 7 and roast for an additional 15 minutes until the skin becomes crispy and golden.
- Prepare the Flavorful Rice:
- As the chicken nears readiness, heat the oil in a skillet. Sauté the peppers and the white parts of the spring onions for 5 minutes. Add the tomato purée and paprika, stirring well. Introduce the rice, ensuring it’s well-coated with the mixture. Cook on high heat, occasionally scraping the bottom to achieve a mix of soft and crispy rice textures. Once thoroughly heated, garnish with the green parts of the spring onions.

- Plate the piri-piri chicken alongside the flavorful rice. Consider pairing with vegetables or a fresh salad for a complete meal.
