Ingredients:
- 2 tbsp olive oil
- 1 large potato (sliced into chunky chips with skin retained)
- 1 beef fillet steak
- 1 sprig of fresh rosemary
Instructions:
- Prepare the Chips:
- Preheat the oven to 200C/180C fan/gas 6. Add 1 tbsp of oil to a small roasting tin and place it in the oven to heat. Parboil the potato chunks in salted water for 3 minutes, then drain and let them steam-dry briefly. Season and gently toss in the hot oil. Roast for 30-35 minutes until they achieve a crisp and golden texture.
- Grill the Steak:
- As the chips near completion, heat a grill pan over medium-high heat and brush it with the remaining olive oil. Generously season the steak with freshly ground pepper, a sprinkle of salt, and lay the rosemary sprig on top.
- Place the steak, rosemary side down, in the grill pan. Grill for 2-3 minutes on each side, or until your desired doneness is achieved, allowing the rosemary to infuse its flavor into the steak. Remove the steak from the grill pan and let it rest for 5 minutes.
- Serve:
- Serve the steak alongside the chips, garnished with the grilled rosemary. A fresh salad or steamed vegetables make excellent side dishes for this meal.
