Ingredients:
- 280g linguine
- 200g sugar snap peas (trimmed)
- 2 tbsp olive oil
- 2 large garlic cloves (finely chopped)
- 1 large red chilli (deseeded and finely chopped)
- 24 raw king prawns (peeled)
- 12 cherry tomatoes (halved)
- Fresh basil leaves (a handful)
- Mixed salad leaves and crusty bread (for serving)
Lime Dressing:
- 2 tbsp virtually fat-free fromage frais
- Zest and juice of 2 limes
- 2 tsp golden caster sugar
Instructions:
- Prepare the dressing by combining fromage frais, lime zest, lime juice, and sugar in a bowl. Season with salt and pepper, then set aside.
- Cook the linguine as per the package instructions, adding sugar snap peas in the last minute of cooking.
- In a large pan or wok, heat olive oil. Sauté garlic and chilli for about 30 seconds, ensuring the garlic doesn’t brown.
- Add the prawns and cook on high heat for approximately 3 minutes until they turn pink.
- Incorporate the cherry tomatoes and cook for another 3 minutes until they begin to soften.
- Drain the linguine and sugar snap peas, then mix them into the prawn preparation.
- Add torn basil leaves, season with salt and pepper, and give it a final stir.
- Serve with salad leaves drizzled with the lime dressing and accompanied by warm crusty bread.
